Yes — the major tourist regions and coast are well covered. Very remote interior and mountain areas can thin out for any network.
Anything I should know about Turkey specifically?
Turkey registers device IMEIs, and travellers occasionally see a personal phone's data restricted after extended use on a local SIM. An eSIM on a short trip generally avoids this, but for longer stays it's worth knowing — reach out if you're staying several weeks and we'll talk through it.
